It’s Valentine’s Day, and we’re celebrating being in love! Love means more than just roses and love letters. It means spending quality time together and caring for one another – in sickness and in health!

Here at The Oregon Clinic, we strive to inspire and support more health for all – and eating nourishing foods that are good for your heart is one way to improve health. Prepare to be inspired by this meal plan for two. This Valentine’s Day, team up and enjoy cooking a day of heart healthy meals together!

Breakfast

Frittata – Use omega-3 enriched eggs, feta cheese, chopped broccoli, chives, and sundried tomatoes to start your day off strong. Top your piece of this simple and filling crust-less egg pie with some sliced avocado and enjoy a whole wheat English muffin on the side.

Lunch

Salmon Salad Sandwiches with fruit salad – Spoil yourself with wild caught salmon and top your sandwich with spicy arugula greens. Make it extra special and grab a loaf of fresh crusty bread from a nearby market. Serve your sandwich open-faced (only use one slice of bread) if you’re not hungry for two.

On the side, enjoy a Vitamin C rich fruit salad with kiwi, berries, and orange or grapefruit slices. Drink with sparkling water with a splash of blood orange soda.

Dinner

Vegetable and Tofu Pad Thai – Not everyone wants to spend the evening over a hot stove. This delicious and flavorful make-at-home takeout will really wow you! It’s a healthier, at-home version you can make in under 30 minutes, leaving you with more time and energy for laughs, toasts, and most of all, quality time together.
